Do you all have an Instant Pot yet? I feel like I was the last person on earth to join the bandwagon and now I don’t know what I did before it!
There will be an entire post devoted to the Instant Pot (aka InstaPot aka IP) at some point but briefly: it’s a modern, safe pressure cooker that can saute meat, slow cook soups, hard boil eggs, bake cakes, make yogurt, steam rice, and sooooo much more! It’s super easy to use, super quick to cook things, and super easy clean up. I mean, if I can’t handle putting one pot in the dishwasher then I need to live in a restaurant. For me the best thing to make in it is chicken and steak, where it cooks it to the PERFECT done-ness and is moist but feels like you’ve marinated it for a week. Last week, I ate a steak with a plastic fork! (I was taking dinner on-the-go, don’t judge me!)
Okay, so assuming you already have and love your Instant Pot, here is my very favorite recipe I’ve made so far. I got it from my friend Jenny and she loves it too! It’s from a blog called Six Sisters’ Stuff. The full recipe can be found at this link.
I’m not a chef, but I believe this recipe could be modified if you don’t have an Instant Pot by making the sauce and marinading the chicken in it for several hours (or overnight) beforehand. Then make sure you cook it low and slow so it doesn’t get dried out!
